Am I not supposed to setup the server hostname under the admin "user" account?

The server hostname is setup on you're server. Wich you entered on install time of you're OS.

I don't know how to setup it on all os'es so look on google how to change you're systems hostname.

Remember to add the servers hostname to the DNS Manager in DA as Admin

Don't create this domain in as a Domain Pointer under one of you're accounts or all you're "username" mail will be delivered to that account.

you CAN create a Domain setup for the servers hostname as long as you don't create accounts that are the same as DA user accounts AND don't install a catch-all on that domain ;)

When I say admin user account, I mean the default DA admin account that is setup when DA is installed.

So my answer as stated above is NO. You do this through SSH/Console as root

Actually, to make sure it gets changed both for the OS and for DirectAdmin, you change it when logged into the Control Panel as admin, under "Administrator Settings".
