Changin Email for site

Hello,

I want to change the email adress on my website Anyone familar with this procedure?

Here is the situation

I recently purchase the site I have acess to the email address that is posted on the site but

Seller refused to remove email address from their paypal account therefore I cannot use the current email adress to collect pay ment from customers.

I also created a new email address pop3 I am clueless how to send it or make the changes to the site
